(my birthday celebration lunch for years...)
She used to make this on my birthdays
A good steak
some red pepper
Put the steak in a pan with a little olive oil and cook each side for 2 minutes, reserve
In another pan mix the chopped tomatoes, onions, red pepper and garlic, add salt and pepper as you desire. Careful, use low temperature.
As soon as it starts boiling and smelling like heaven, add the steak. Let it cook for six to ten minutes each side, dont let the sauce dry up so use a cover and stir it once a while.....
As soon as this glorious preparation is ready, keep it covered and in a little pan fry the eggs
Try to get those delicious crispy sides...with the sauce they taste so goood...
Serve it in a plate pouring the sauce over the steak and place on top the fried eggs
You can have this dish with a green salad and french fries or a good baked potato.
Also the beverage or your choice:
a good red wine or a nice beer, for the kids a good fruit juice though.
